Dried Red Shrimps

African cuisine, dried red shrimp are used to flavor as well as garnish. They have a fishy flavor and a chewy texture, and are used whole, chopped, or ground in stews, porridges, and vegetable soups. Often they are soaked in warm water to reconstitute before using; the soaking water is sometimes also added to the dish for extra flavor.
